Baking 101: TESDA Scholar’s Program

The future craft bakers. 

Baking was the bread and butter of our family. My mother from being a house helper became one of the best bakers in a thriving company in the 80s to the early 2000s. Her earnings from baking chocolate cake supported my studies from elementary to college. I thought of continuing the legacy, but, where do I begin?

How do you bake? It’s quick & easy! Really?

The news spread like a wildfire that a training school in Trece Martires was offering a TESDA scholarship for Bread & Pastry Production.

The good news- it’s FREE!

So, who am I not to grab the opportunity?

Instead of wasting my time on procrastinating what lies ahead in my future. I took a leap of faith and travel all the way from Imus to Trece Martires. The jeepney ride was not easy. It was like another first, but all the efforts paid off.

Standard Culinary & Technical Skill Training Center in Sugarland Estates, Brgy. Hugo Perez, Trece Martires City is one of the best learning schools in Cavite that partnered with TESDA to empower Filipinos with the necessary skills to own a business or to land a job opportunity abroad.

The owners are visionary leaders who made an effort to share their expertise and skills to the public. They are one of the baking trailblazers in Cavite.

Our class was composed of teachers, families of OFW, mother & daughter tandem, young students, young professionals, future business owners and a cancer survivor with his brother whose goal was to learn the rudiments of baking.

Our facilitator was a young gentlemen whose dedication and commitment in teaching was commendable.

It was 18 straight days of lecture, workshop (actual baking) and evaluation/assessment from TESDA (NC II requirements).

We started with the basic science of baking and kick-off with the basic recipes of doing cookies, dough, and pastries to the complicated procedure of making a cake.

I enjoyed every minute of it, perhaps because of innate skills I inherited from my mother.

After the lecture and the workshops, we had an institutional assessment where our facilitators gauged us if we are ready for the NCII assessment.

It was fun!

Nerve-wracking!

You really have to be on your toes and make sure that you understand the baking procedure.

We were required to make four (4) baked products for the TESDA NC II assessment – the dinner roll, chocolate éclair with chocolate glaze & cream puff with caramel sauce with custard filling and Swiss roll.

It was like the board exam of the future bakers!

These competencies will gauge us if we are ready to conquer to baking world.

Hands-on.

The NC II certificate will not be given to you on a silver platter, you really have to work hard on it.

The ingredients are pre-measured. All you have to do was to meet the standard quality (finish products) set by TESDA to get the NC II.

Four baked goodies in four hours (9am to 1pm).

Of course, the assessor will be roaming around while you are doing the baked goodies.

Aside from that, there is an interview round to test your knowledge on the basics of baking.

I was no. 1 in the assessment – the first assesse (I am not sure if this is the right term –hehehe)

First to be called during the interview round and also the first in the line for the baked goodies’ evaluation.

To sum it up, I passed the NC II assessment!

The assessor will give you a slip of paper (it’s like your class card) to know whether you passed or not yet competent (NYC) status.

I am not sure, if some of my classmates failed but we are in a jubilant mood when we received the slip.

The slip will then be presented to the TESDA provincial office at the back of SM Trece Martires. The certificate is claimable after 10 working days.

What did I learn from the experience?

  • You are never too old to learn a new skill.
  • Help one another during the baking process, not everyone is gifted with the basic know-how, share your knowledge to others.
  • Baking is a science – like music and mathematics everything has to be exact or else you will have a sub-standard finish product.
  • Do what you are passionate about. I like eating – so better study how to bake hehehe
  • Share the good news – if my mother-in-law did not share the info to us, I will not be able to take part in the TESDA scholarship program.
  • Support the government – do your part, they gave you a scholarship, study hard and learn well. Don’t waste the resources allocated to you by the tax payers of the country.

PS: Together with my brother, we were able to get the NCII certificate from TESDA provincial office in Cavite last Tuesday, July 12, 2016. It was just at the back of SM Trece Martires, which was a beautiful mall in the suburbs.
